Chocolate Mint Patty Delights

1 cup butter, softened

1 cup sugar

1 egg yolk

1 teaspoon vanilla

1 1/2 cups flour

4 eggs

1 cup semisweet chocolate pieces, melted and cooled

1 teaspoon vanilla

2/3 cup flour

2 cups miniature chocolate-covered cream-filled mint patties.

 

Line a 13x9x2-inch baking pan with foil so foil extends over edges.

Beat together 1/2 cup of the butter

1/2 cup of the sugar.

Add egg yolk and vanilla

Beat well

Beat in 1 1/2 cups flour at low speed till mixture is crumbly

Press mixture into pan

Bake in a 350 oven 15 minutes or till lightly browned around edges.

 

Meanwhile, beat remaining butter and sugar.

Add eggs, one at a time; beat till smooth.

Stir in melted chocolate, vanilla and 2/3 cup flour just till combined.

Spread over baked crust.

Bake 10 minutes

Remove pan from oven; sprinkle mint patties evenly over top.

Return to oven; bake 15 to 20 minutes more or till a toothpick inserted into cake portion comes out clean.

Cool

Lift from pan, using foil

Use a 2 1/2-inch round cookie cutter to cut into rounds or cut into bars.

Sprinkle with powdered sugar, if desired

Makes 12 to 15 rounds or 24 bars.
