I had these cookies at a reunion they were so good I wanted the recipe for them.
I never was told what the name of them so going to give them a name.
Ingredients:
1 cup sugar
1 cup light corn syrup
1 cup creamy peanut butter
1 box (12 ounces) cornflakes (about 8 cups)
- In 5-quart saucepan, mix the sugar and corn syrup; beat to boiling over
high heat, stirring frequently. Boil for 1 minute.
- Remove saucepan from heat and stir in peanut butter until blended. Add cornflakes, stirring gently to coat.
- Working quickly, drop mixture in ¼ cup lumps-keeping cookies 2 inches apart-onto
countertop lined with waxed paper or foil. Using your fingers, shape each cookie
into a rounded mound if necessary. Let cookies stand 20 to 30 minutes at room
temperature to set. Store cookies in a tightly covered container at room temperature.
