Oven set on 350 and Bake for 1 hour or until a toothpick comes out clean
 
Large bowl mix
1 1/3 cups Sugar
2 Eggs Beaten
2 teaspoon Vanilla
Mix in greated Zucchini 3 cups
then mix in 2/3 cup melted butter (unsalted)
 
dry ingredents together in seperate bowl
 
2 teaspoons Baking Soda
Pinch of Salt
3 cups Flour
1/2 teaspoon Nutmeg
2 teaspoons Cinnamon
 
1 cup chopped walnuts (opt)
1 cup raisins (opt)
 
Add Dry ingredents to Wet ingredients 1/3 at a time
 
Divide batter between 2 buttered 5 by 9 inch loaf pans
 
When done remove for oven and cool for 10 minutes then remove bread and put on rake and let cool until cool.
 
Make 2 loaves
