Wash and cook your Beets, to tell when they are done, take a broom straw and if it goes
into the beets easy they are done. Put into cold water, and take your hand and the skins will come right off,
cut each end a bit.
1 cup water 1 cup sugar 1 cup vinegar
Bring to a boil
Can them when they have
cooked the 15 minutes turn down the temp. Fill your clean dry canning jars or cool to eat, better to me if they set
for a couple of days to get the vinegar thru the beets.
Then have you ever pickled EGGS? Boil a dozen of eggs,
cool and peel them and put in a jar big enough to hold all of them, pour the beet juice over them and put beets on top to
hold them down to stay in the vinegar.
Since doing this I have bought an EGG COOKER, I do 7 eggs at a time. What you do is there is a measuring container for water,
fill up to the highest line. Put your tray on then with that little cup you poke an hole in the end of the egg, set the egg
on the tray. When through with the 7 eggs, put the lid on. Then turn the egg cooker on, it has an timer and will shut off,
then I take a small pair of tongs lift them into the bowl hard enough to crack the eggs as I put them in the bowl. When all
7 are in there I shake the bowl to make sure they are good and broken. Turn on the cold water to cool them down, I leave my
water run. You might get one totally out of the shell. Very easy to take the shells off.
Your eggs will be nice and red and GOOD.
I also put eggs in my favorite pickle juice they are good also, when
the kids was growing up I had to have a couple of dozen done all the time.
